Ingredients
100g ready-rolled light puff pastry
1 tbsp lemon juice
250g cooking apples
500g pitted and stoned dates
1 tsp vanilla essence
Method
- Preheat the oven to 180°C, 350°F, Gas Mark 4.
- Peel and core the apples, slice into a saucepan containing the lemon juice. Heat gently to soften, then add the dates and continue to heat until you have a sticky paste. Add the vanilla and remove from the heat.
- Roll out the pastry as thin as possible into a large rectangle. Cut the pastry in half and line the base of a small baking tray. Spread over the paste, then top with the remaining pastry. Brush the top lightly with a little milk or beaten egg if you want a more attractive golden finish, then bake in the preheated oven for 25-30 minutes until golden brown.
- Once baked, let the tray-bake cool before chilling overnight. It will then slice much more easily.
- Cut into 12 squares. Dust the top with icing sugar and serve.
