Soda BreadA round loaf of soda bread with a crusty top

Soda Bread made to this recipe substitues low-fat yogurt for the traditional buttermilk creating a moist, light loaf.

Serves 8
Per serving: 159 calories, 0.8g fat
Prep time: 20 mins
Cook time: 35 mins


Ingredients

350g strong white flour
100g wholemeal flour
1 tsp salt
4 tsps baking powder
3 tbsp low-fat yogurt
300ml tepid water


Method

  1. Preheat the oven to 220°C, 425°F, Gas Mark 7
  2. Sieve the flours together in a large bowl. Using a fork mix in the salt and baking powder. Rub in the yogurt. Bind the mixture with the water, adding the water gradually. If the dough is too stiff add a little more water.
  3. Transfer the dough onto a floured board. Knead the dough and form into a smooth ball. Place on a non-stick baking sheet and cut a cross in the top of the dough with a sharp knife.
  4. Bake in the oven for 30 – 35 minutes. To test if the bread is cooked, turn it upside down and tap the bottom. It should sound hollow when fully cooked.
