Black Cherry and Mango Christmas Pudding

Black Cherry and Mango Christmas Pudding is so easy to make and makes an exciting alternative to the traditional recipe.

Ingredients

200g luxury mixed dried fruit
100g dried mango, chopped
100g dried cherries
4 tbsps brandy, rum or beer
75g self-raising flour
1 tsp mixed spice
½ tsp ground cloves
50g breadcrumbs
50g dark brown sugar
2 tsps gravy browning
zest of a lime
zest of ½ orange
200g grated cooking apple
1 tbsp lime juice
2 eggs, beaten
4 tbsps milk
2 tbsps chopped stem ginger
4 tbsps brandy, for reheating
2 tsps manuka honey, for serving


Method

  1. Soak the fruit in the alcohol overnight. This makes a big difference to the finished pudding as it will be rich and moist with lots of flavour.
  2. Place the soaked fruit in a large mixing bowl. Add the ingredients one at a time mixing well after each addition. Spoon the mixture into a 1.2 litre pudding basin and cover with four layers of clingfilm until ready to cook.
  3. To steam, cover with foil and steam gently for 3 hrs. To reheat, steam for 1-2 hrs.
    Alternatively, to microwave, place an upturned plate on top and cook on high for 5 minutes, allow to stand for 5 minutes then cook for a further 5 minutes. To reheat, cook on high for 5 minutes.
  4. Drizzle with honey before serving.
